  • Happy 2009

    So I left Bebo and I left facebook and I left my blogspot and all I have left is my Xanga profile with you ten or so friends across the globe and no Irish people know what Xanga even is and I dont really know how to work it.  I cant remember why I picked my background picture just have a vague recollection that there was great inspiration behind its choice and well I had to check it out because CC_Alex wanted to be my newest Xanga friend...Since my last entry was New Years I figured I could make a new entry and wish everyone a Happy 2009 and give a little update! 

     

      Shane and I have been back in Ireland since about mid may after Nate and Dianas wedding!  We missed it and alot at first and still do.  It was a bigger adjustment settling back into life here than life in Ukraine.  We couldnt find work for ages but it was amazing to see God providing for us and after months of waiting of trials, joys, encouragements and dissappointments only in the last while have we both settled into jobs.  On the very upside we can see God hand on keeping me from getting settled into a job so soon as I have now landed a job not only with a very kind boss but also with a dream come true as I work for a chocolate company they have asked me to develop a range of baked chocolate goods for their company and well I am so blessed by God to have this oppurtunity.  At the moment I am making hot chocolates and coffee for them at a stall in an ice rink but in the New Year the factory will get up and running and Katies Corner will be up and running with it.  Prasie God!  Shane is working at an electronics store and learning a lot about electronics.  He misses his time to study but enjoys not having responsibility for people and the anonimity of being a sales assistant who passes all irate customers over to his managers

     

      I feel a little unsettled recently.  This has been my first Christmas ever only having two days to enjoy Christmas.  I usually had two weeks and so I am lonely after my days of youth and then missionary work but God is good in this the recession it is such a blessing to have a job and so I can onlky praise God for it.  I enjoy work but I also LOVE being at home and having free time so I have been blessed with the best of two world.s

     

      Being home has definitely grown me alot and I am so thankful for it. 

     

      Praise God!

  • The Joy of Watching Children Grow

    I was looking through old videos and pics today and I came across this video of Joelle from just a few months back and it made me so happy. She is so cute and it has just been such a wonderful blessing to see her grow. So I have posted the video that brought me so much joy today of the little apple queen.

    She was just beginning to say things more clearly, and so I was saying words I knew she knew so that she would repeat them. Now she is making full sentences herself almost. It is amazing to see how much she has grown since the Summer only. My husband also uploaded a video lastnight for the pleasure of any Risk fans and or Stephen fans or really for anyone who wants a giggle so take a peek.

  • Chewy Caramel

    Chewy Caramel

    Ingredients:

    • 1 cup butter or margarine
    • 1 pound light brown sugar
    • 1 (14 ounce) can sweetened condensed milk
    • 1 cup light corn syrup
    • 1 pinch salt
    • 1 1/2 teaspoons vanilla extract

     

    So you put all the ingredients into a heavy bottomed sauce pan - or whatever saucepan you have - except the Vanilla.  Then you mix them altogether over medium heat until they reach the softball stage.  Your sugar thermometer should tell you what temperature that is - its about 116 degrees celsius.  Take it off the boil and stir in vanilla.  Then you leave it cook at that temperature for about three minutes and then you pour it out into a well-greased tin.  Wrap in cling film after it has set.

     

    Anyway I just made it once.  I got the recipe off the internet.  It was really yummy and it made alot.  In fact I still have some left.  Its great for pancakes, caramel apples and caramel popcorn and just for eating. 

     

    I used Golden Syrup instead of Corn Syrup as we dont have corn syrup in Ireland.

     

    I think it would taste really good on top of Graham Cracker with choclate on top.  I never got to try this I didnt have any bran to make Graham Crackers  but feel free to try it for me and let me know how it comes out.
